Meet Nilo — Custom Cake Designer in Whitby

Nilo, owner and cake designer at Cakes By Nilo, in her Whitby studio

I'm a custom cake designer in Whitby, and I design, bake and decorate every cake that leaves my studio myself. No production line, no pre-made layers, and no handing your order to someone else halfway through. If you've spent months choosing a palette, the cake should match it and it should taste as good as it looks.

How I Started as a Custom Cake Designer in Whitby

I wasn't looking for this, I believe it was my calling.

I made a red velvet cake for my brother's birthday because I wanted to give him something special. I watched his face when I carried it out. That was all it was meant to be, and I thought about it for weeks.

Then my nieces started asking. Then their friends' moms. My kitchen stopped being a kitchen, cooling racks on the dining table, piping bags in the cutlery drawer, me up past midnight on a Tuesday for people who weren't paying me.

There was a night I nearly stopped. A four-tier cake I'd built without dowels, and I watched it lean and then go over, an hour before it was due. I sat down on the floor and thought, you are a grown woman crying about a cake. Then I got up and rebuilt it. It went out on time.

My best friend is the one who made it real. She asked me to do her granddaughter's birthday cake, then refused to let me do it for nothing, put the money in my hand and closed my fingers around it. I don't think she knows what that did.

The first wedding cake came the year after. Sugar flowers I wasn't sure I could finish. When I set the top tier and stepped back, I stopped calling it a hobby.

I still work out of my own kitchen and I still talk to everyone who orders. But what I'm actually after is the thing I got the first time, watching my cliet's face do what my brother's did.

How I Work as a Custom Cake Designer

It starts with a conversation. Bring me a photo, a colour palette, or just a date. You don't need a finished idea. From there I sketch a design, work out the sizing for your guest count, and give you a firm quote before anything begins.

For weddings and larger events you pick the flavours you'd like to try, and I make them up as mini cakes for you to take home and taste in your own time. The cost comes off your booking when you go ahead.

Then I bake it. Everything from scratch, the week you need it, in the order it's going out. Wedding cakes I set up on site myself, because a cake that travelled well can still be assembled badly.
